Oatmeal in the Crockpot?

Oatmeal made in the crockpot is GOOD stuff! Here is a recipe that's perfect for this time of year.

Overnight Crockpot Pumpkin Oatmeal
Prep Time: 10 minutes
Cook Time: 7 hours
Yield: 4 cups
Ingredients
  • 1 c steel cut oats
  • 2 c almond milk (60 calorie original)
  • 2 c water
  • 1/2 c dark brown sugar
  • 1 c pure pumpkin purée
  • 1 t cinnamon
  • 1/4 t salt
  • 1 t vanilla extract
  • 2 T butter, melted

  • (garnish)
  • craisins
  • walnuts
  • whipped cream
  • nutmeg
  • cloves
Instructions
  1. Mix all ingredients together in a bowl.
  2. Spray inside of crockpot with cooking spray.
  3. Pour mixture in crockpot, cover. Set on timer for 7 hours on low.
  4. In morning, stir well and top with craisins, walnuts, whipped cream, nutmeg, and cloves.
  5. Makes about 4 cups
